But I look at Larry Crowne and know for certain that if his love interest was an unknown actress, I'd be more inclined to watch it, rather than $10m Julia doing the same old uncharming-charm act.

I assumed you meant upcoming movies, a casting announcement can make you interested in something, once the movie has been made that ship has sailed. For instance: the rumoured casting for 42 and the next Star Trek movie. I'm more intrigued by Edgar Ramirez than Benicio Del Toro and by Chadwick Boseman than I would be by a familiar name. But I guess I misunderstood you...this is just 'actors we don't like anymore'?
